For the record, I’m not obsessed with baking banana cakes. We just happen to have leftover, super ripe bananas so rather than wasting it, might as well do something with it.
But not happy with the previous recipes I’ve tried so googled around for another recipe and hopefully one that doesn’t require anything I don’t already have, cause I’m too lazy to get out to buy haha, 皇天不负有心人, found this online which seemed pretty easy to do
Ingredients:
Plain (all-purpose) flour 225 g
Baking powder 1 tsp
Bicarbonate of soda 1 tsp
Butter 160 g
Sugar 160 g
Eggs 3
Lime 1, squeezed for juice [I didn't have any so just left this out, not sure what the difference would have been though]
Milk 3 Tbsp [Didn't have milk at home, except Coconut Milk, which I figured it should be the same or even if not, wouldn't make too much of a diff heh]
Ground cinnamon a pinch [I didn't have any so just left this out too]
Bananas 2, large, peeled and mashed
Method
1. Preheat oven at 200°C (400°F). But I later adjusted it to 160°C for the eventual baking
2. Sift flour, baking powder and bicarbonate of soda into a mixing bowl and set aside.
3. In a clean mixing bowl, cream butter and sugar until butter is pale in colour. Beat in eggs, then add lime juice, milk and ground cinnamon.
4. Add in mashed bananas in 2 parts and mix well.
5. Gently fold in sifted flour mixture by hand. Mix well until a smooth batter is formed. Pour batter into a greased 20 x 20-cm (8 x 8-in)
square baking tin. Bake for 40–50 minutes.

6. Remove and set aside for 10 minutes to cool before removing from tin. Slice and serve.
I actually left it inside the baking oven to cool, hoping the trapped heat can help to further cook the center base haha which still felt a bit wet when I did the skewer test, but thankfully, it all came out well:

Moist yet not too buttery nor sweet. Just nice. Yummy!
Ah Peng says I need to stop baking and do something else. Yes I really should, just that I haven’t really found ‘something else‘ to do. Maybe I should really consider taking up tennis like Aunty Jul suggested….Time to try out something new, re-locate the energy in me…
